After you harvest them!

We always put our Shiitakes out in the sun for a couple of hours after we first harvest them - gills up.

It helps to massively increase the amount of Vitamin D they will give to you. This has been known for many years.

A study published last week (March 23, 2022) in the journal Food and Nutrition tested the exact amounts of Vitamin D in Shiitakes, Oysters and Button mushrooms before and after exposure to UV light for 15 to 150 minutes.

They found a significant increase in Vitamin D in all three types of mushrooms exposed to UV light. Furthermore, they found that the Vitamin D levels continues to gradually increase for another 48 hours in mushrooms stored at room temperature and for 72 hours for those stored in a fridge.
